Ever consider Red Snapper instead of cod, grouper, or halibut? I usually order filets from the fishmonger and can eat them with just butter, salt and paprika. This recipe coats the red snapper filet in parmesan cheese and other spices making this packed with flavor.
I usually ask the fishmonger for the whole fish when I’m making grilled fish. She takes the extra step to cut the fins and tail, although sometimes I like the tail and find it for presentation’s sake.
I’m a big advocate for using fresh herbs (check out my blog about 10 must use herbs for the greek keto diet) such as parsley; however, in this version, I used dried parsley flakes in order to get a better crust after I mix it with the parmesan, garlic powder, onion powder, and paprika.
