This is a simple and fresh salsa topping that goes great over anything grilled, particularly grilled fish and grilled chicken.  Think of it as a Greek salsa without tomatoes.   

The ingredients are simple:  Onions, fresh parsley, oregano, (check this useful blog about oregano), salt, and pepper.

Mixed with fresh lemon juice and Extra Virgin Olive Oil

You just put everything in one bowl and mix.  Serve over your favorite grilled meat.

Such a simple and fresh salsa. Typically, you will see things garnished with parsley, salt, pepper, oregano, olive oil, and lemon. I have added onions and combined this into a salsa that you can add on grilled meats, particularly fish.

  • Medium Bowl

Ingredients

  • ½ cup onions, finely chopped

  • ½ cup flat-leaf parsley, finely chopped

  • ¼ cup Extra Virgin Olive Oil

  • ¼ cup fresh lemon juice

  • 1 Tsp. oregano

  • 1 Tsp. pepper

  • ½ Tsp. salt

Combine all ingredients in a bowl and mix well.

Notes

This recipe is enough for 3-4 people, so you can easily double. You can make this about 1 hour ahead. You really want this to be as fresh as possible. Otherwise, the lemon juice will wilt the parsley. Try to use flat-leaf parsley. Do not use curly parsley or dried parsley flakes.
