Baked Cod with Lemon & Capers

This is a quick and easy-baked cod dish with my Greek Lemon Caper sauce which you can find under “Sauces and Dressings.” Almost like an Italian piccata sauce, this tangy and lemony sauce goes excellent with baked cod.

Equipment

  • Baking Pan

Ingredients

  • 1 lb. (450 grams) of fresh cod

  • 1.5 Tbsp Extra Virgin Olive Oil

  • Salt and freshly ground pepper to taste

  • Lemon Caper Sauce (see Sauces & Dressings)

Instructions

Preheat your oven to 400 F Degreed (about 200 C Degrees).

Rinse your fish and pat dry it well using kitchen paper towels.

Arrange your cod in a baking tray. Add your olive oil on the fish, and your salt and pepper to taste.

Bake the cod for about 12-14 minutes depending on the thickness of your fish. Once done remove from the oven.

Pour over your Lemon Caper sauce and serve immediately.

Notes

Make your Lemon Caper sauce first and set aside. You can put the Lemon Caper sauce in a thermos or flask to keep warm until you make your fish. Or just leave in the saucepan and reheat for 1 or 2 minutes once your fish is ready. You can use frozen cod; however, I often find that frozen cod is stringy, fibrous, and not as succulent as the fresh kind. If you have no choice, then obviously use frozen cod filets.
