Lemon Caper Sauce

One of my favorite sauces that I use either on fish or chicken and is, tart, salty, and full of lemon. Add some fresh chopped parsley and this sauce is exquisite. This sauce is not an over-cooked sauce and takes less than 5 minutes to prepare. I always keep a jar of capers in my refrigerator, knowing I may have to make this sauce for a last-minute dinner.

Equipment

  • Small frying pan

Ingredients

  • 2 Tbsp Olive oil

  • 1 juice of a lemon

  • 3 garlic cloves, minced

  • 3 Tbsp fresh parsley, chopped

  • 2 Tbsp capers

  • Salt and Pepper to taste

Instructions

Add the olive oil to the frying pan, and on medium-high heat, and sauté the garlic for 2 minutes.

Then add the lemon juice, capers, salt, and pepper to taste and cook for 1 more minute. Serve hot.

Notes

You can try a version without the garlic, or try other fresh herbs like coriander (cilantro), tarragon, dill, and fresh mint. You can also add a tablespoon of white wine.
