Baked Cod with Savoro Sauce

This is a quick and easy-baked cod dish with my Greek Savoro sauce which you can find under “Sauces and Dressings.” Savoro sauce is originally from the Greek Island of Ithaki and it pairs well with fish because of the tangy vinegar that is used over the baked cod. Traditionally, this sauce is used with fried fish, but I love it on this quick and simple baked cod.

Equipment

  • Baking Pan

Ingredients

  • 1 lb. (450 grams) of fresh cod

  • 1.5 Tbsp Extra Virgin Olive Oil

  • Salt and freshly ground pepper to taste

  • Savoro Sauce (see Sauces & Dressings)

Instructions

Preheat your oven to 400 F Degreed (about 200 C Degrees).

Rinse your fish and pat dry it well using kitchen paper towels.

Arrange your cod in a baking tray. Add your olive oil on the fish, and your salt and pepper to taste.

Bake the cod for about 12-14 minutes depending on the thickness of your fish. Once done remove from the oven.

Pour over your Savoro sauce and serve immediately.

Notes

Make your Savoro sauce first and set aside. You can put the Savoro sauce in a thermos or flask to keep warm until you make your fish. Or just leave in the saucepan and reheat for 1 or 2 minutes once your fish is ready. You can use frozen cod; however, I often find that frozen cod is stringy, fibrous, and not as succulent as the fresh kind. If you have no choice, then obviously use frozen cod filets.
