Greek Roasted Chicken

One of the most traditional and go-to Greek meals for me. There are multiple variations to this dish, for example, you can substitute Thyme for Oregano, or you can substitute butter for Olive Oil. You can also add fresh minced garlic, or garlic powder. But the way I have described it here, is the traditional way.

Ingredients

  • 1 3 to 4 pound chicken (1-2 Kilograms)

  • 2 Tbsp dried oregano

  • ¼ cup Extra Virgin Olive Oil

  • ¼ cup fresh lemon juice

  • 1 cup of water or chicken broth

  • Salt and pepper to taste

Instructions

Preheat oven to 350°. Wash your chicken and completely dry it using paper towels.

Place your chicken breast-side up on a rack in a roasting pan. Stuff the 4 lemon wedges into the chicken’s cavity.

Drizzle Extra Virgin Olive Oil on entire Chicken. Use your hands to rub the olive oil so that all the skin is covered in olive oil. Then do the same with the lemon juice, ensuring it goes all over the chicken. Sprinkle with the salt, freshly grated pepper and the oregano.

At this point, add the 1 cup of water or chicken broth to the pan; you can also add vegetables like celery and carrots around the chicken.

Bake, uncovered, 1 to 1 ½ hours or until a thermometer inserted in thigh reads at 170°. You can baste throughout the process with the pan drippings.

Then, remove chicken from the oven; tent with foil and let it stand 15 minutes before carving.

Notes

Many chefs will say to roast the chicken at about 400 or 425 degrees F. However, the Greek way incorporates a slow roasting process, and believe it or not, doesn't dry out the chicken. Maybe its the olive oil that magically keeps the chicken moist. You can also rub olive oil under the skin as well. Make sure you season the chicken generously. You don't want it to be bland. Also, adding the cup of water or chicken broth also helps with the moistness.
