This recipe combines my “foundational” roasted chicken breast recipe, covered with my Feta Cream Sauce and then served with a side of my crispy Brussels Sprout roasted chips.

Roasted Chicken Breast with Feta Cream Sauce

This simple roasted chicken breast uses salt, pepper, and olive oil to give you a moist and tender chicken breast covered with my silky Feta Cream Sauce.

Equipment

  • Baking Tray

  • Parchment paper

Ingredients

  • 2 chicken breasts (bone-in, skin-on)

  • 2 Tsp. Extra Virgin Olive Oil

  • Salt and Fresh Ground Pepper to taste

  • Feta Cream Sauce (See under Sauces & Dressings)

  • 2 Tbsp. chives, chopped

Instructions

Line a baking sheet with parchment paper.

Lay your chicken breasts skin side up.

Add your salt, pepper, and olive oil.

Place in pre-heated 425 F degree oven.

Bake/Roast for 40 – 45 minutes or an internal temperature reading of 165 F Degrees.

While your chicken is roasting, make your Feta cream sauce. My recipe can be found under Sauces & Dressings.

Remove from oven and set aside to rest for 10 minutes.

Using your hands (with gloves if you have guests), carefully remove the entire breast from the bone. At this point, you can either leave the skin on the chicken breast, or you can remove it. If you achieved crispy skin, then leave it on; but if it is not crispy, then definitely remove it.

Cut your chicken diagonally, and then add to the plate. Now cover with the warm Feta cream sauce, garnish with chopped chives, or chopped fresh parsley and serve immediately.

Notes

You can either serve the chicken breast whole, or slice diagonally, cover with the Feta cream sauce, and serve with a side Brussels Sprouts chips.
