Try this delicious baked fish that is popular in Greece. Many different islands of Greece produce a slightly different variation of this dish when it comes to herbs and garlic and onion.

Equipment

Ingredients

  • 1 (2 lbs) Kilogram Halibut fillet

  • 2 sliced red onions

  • 2 minced garlic cloves

  • 2 head of garlic, cut in half

  • 2 sliced tomatoes

  • 1 thinly sliced lemon

  • ½ Cup Olive Oil

  • ½ Cup chopped fresh parsley

  • ½ Cup White Wine (Optional)

  • Salt

  • Pepper

  • Oregano

Instructions

Spray a 9 in x 13 in pan with cooking spray. Then lay the halibut in a 9 in x 13 in the pan.

Cover the fish with the onions, tomatoes, lemon sliced, garlic, and parsley.

Pour wine and extra virgin olive oil over the entire fish. Lay your half-cut garlic on each side of the fish to bake with the fish as shown in the picture.

Add salt, pepper and oregano to taste.

Bake at 390 degrees F or (200 C) for 45 minutes.

Notes

This fish is versatile and you can certainly use other vegetables. Try fennel or leeks, or you can lay a layer of spinach on the bottom layer.
