The classic tapenade is made with capers and sometimes with anchovies or anchovy paste. I have ventured out and came up with the following tapenade that tastes great on lettuce leafs, or homemade KETO crackers and used as an appetizer. Read my blog "Tapenade: What it is and how to use it."

Equipment

  • Food processor

Ingredients

  • 1 cup pitted black olives, drained

  • 1 cup pimento-stuffed green olives drained

  • 1 cup kalamata pitted olives, drained

  • 4 green onions, stems included

  • 2 tbsp capers

  • 1 garlic clove

  • ½ cup Extra virgin olive oil

  • 1 tsp red pepper flakes

Instructions

First open all the cans/jars of olives and drain in colander.

Place the olives with the remaining ingredients in the food processor.

Keep pulsing until everything is finely chopped into a spread. At this point, you may want to taste the spread to adjust for any additional seasoning it may need.

Notes

Tapenade was originally invented in 1880 by chef Meynier of the restaurant La Maison Dorée in Marseille.The traditional tapenade recipe includes black olives, capers, anchovies, olive oil and possibly garlic and some spices. but this Greek Keto version combines Greek and Spanish olives to give it a unique flavor.
