Greeks use sesame seeds in baking as well as in cooking. When I was living in Kuwait and Saudi Arabia, I had many Syrian friends that would always bring me a Syrian cookie called Barazek, which was a pure sesame cookie; however, that cookie was made with flour. This keto friendly version is only made with pure sesame seeds and is delicious.

Equipment

  • Mixing bowl

  • 12x16 Parchment Sheet/Paper

  • 13x18 Baking tray

Ingredients

  • 1 cup raw sesame seeds

  • ¼ cup granulated Erythritol or Monk Fruit

  • 2 medium egg whites

  • 1 Tsp. vanilla extract

Instructions

Mix all ingredients in a mixing bowl.

Place parchment paper on baking tray.

Using a cookie dough scooper, drop rounded scoop onto parchment paper. Flatten each cookie and clean up the edges to ensure you have a proper round cookie. These cookies will not spread out, do don’t worry how close you place them on the baking tray.

Place in 350 F degree, pre-heated oven and bake for 15-20 minutes or until golden brown. Remove and cool before eating.

Notes

You can make a savory version by omitting the 1/4 cup sweetener, and adding 1 Tsp black pepper, and 1/2 cup grated parmesan. Goes well with wine and cheese
