Greek Vinaigrette Salad Dressing

The most basic Greek dressing is either Extra Virgin Olive Oil and Vinegar or lemon. I have enhanced and adapted this original version to include different kinds of vinegar, herbs, and spices. However, the basic ratio and amounts never change.

  • Mini Bullet or Blender


  • 1 cup Extra Virgin Olive Oil

  • 3 Tbsp. fresh lemon juice

  • 3 Tbsp. white wine vinegar

  • 2 tsp. oregano

  • 1 tsp. salt

  • 1 tsp. pepper

  • 1 tsp. granulated stevia or monk fruit

  • 2 tsp. Dijon mustard

  • 1 whole shallot


Combine all ingredients in a blender and blend for 1 minute until smooth and creamy.

This recipe is enough for 8 people. You can always make, refrigerate, and use as needed. It will last at 7 days in your refrigerator. You can make variations as well: Version 1: Use all white wine vinegar; Version 2: Use all red wine vinegar; Version 3: Use all lemon juice. Version 4: Use all lemon juice + 1 garlic clove. All five of these versions are delicious. The all-lemon juice version can also be used on grilled fish and in the cabbage salad.
