In my family, this was also considered a winter salad and goes with many dishes. Here are some variations. Variation 1: Instead of vinegar, use 2 tablespoons of freshly squeezed lemon juice. Variation 2: Omit the carrot and add 1/4 cup chopped fresh dill weed. Use lemon juice in this variation. Variation 3: Instead of 4 cups of white cabbage, spilled 2 cups of white cabbage and 2 cups of purple cabbage. Variation 4: Instead of 4 cups white cabbage, substitute 4 cups of purple cabbage.

Ingredients

  • 4 cups cabbage -- shredded

  • 1 medium carrot -- shredded

  • ¼ cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • ½ teaspoon salt

Instructions

Add the shredded cabbage to a big mixing bowl. Add the salt and toss. Leave this setting for 10 minutes.

Add the shredded carrots.

Drizzle the olive oil and vinegar over the salad and toss. Serve immediately.
