Cabbage Cakes

Japanese and Korean cabbage pancakes are so delicious and this is what inspired this recipe. I kept it simple and vegetarian; however, I did provide you an alternate variation at the end of this recipe. This is easy to make, filling and you can have it for breakfast, lunch or dinner. Also goes great as a side.

Equipment

Ingredients

  • 5 medium eggs

  • 3 cups shredded cabbage

  • 1 carrot, julienned or shredded

  • 2 green onions, chopped

  • 4 garlic cloves, minced

  • 1 Fresno red pepper, sliced

  • 1 Tbsp Aleppo pepper flakes

  • ½ cup Extra Virgin Olive Oil

  • Salt and freshly ground pepper to taste

Instructions

Wash and shred your cabbage. Usually ½ of a small head of cabbage will yield you about 3 full cups. Put in big mixing bowl.

Wash and peel your carrot. Using your vegetable peeler, cut as many ribbons of carrot as you can; otherwise, you can julienne or you can shred the carrot using a box grater. Add this to the cabbage.

Then add the eggs, green onions, garlic and your Fresno pepper, salt and pepper, and mix well.

Heat your frying pan/skillet to medium-high heat. Once the pan is heated you are ready to begin frying.

Using a measuring cup, scoop out ½ cup of the cabbage mixture and place in heated pan. As you scoop out the mixture, continue to mix the cabbage mixture in the bowl, as the egg settles at the bottom; this way you ensure all the cabbage and other ingredients are evenly coated.

Fry for 4 minutes or until brown, then flip and fry on the other side. Once brown on both sides, remove and place on paper towel to absorb any extra oil.

My large pan allowed me to do 4 cabbage cakes at once, so I had to fry twice, giving me a total of 8 cabbage cakes.

Notes

Asian Variation: To give this a more Asian flavor, add 4 chopped raw shrimp, 1 Tbsp of minced ginger, 1 Korean red-hot pepper, and 1 Tbsp soy sauce, instead of the salt.
