Although this is not a Greek recipe per se, it is my adaptation of a Saudi breakfast sandwich, so it is made by a Greek, which should qualify for a place on my website. This Saudi breakfast sandwich is called Baid Maslooq, which translates to “boiled egg” in Arabic (Saudi Dialect). You typically find this sandwich at traditional Boofiya restaurants, the Saudi version of a deli, that has various and unique sandwiches that can be eaten at 10 am in the morning or at 11 pm at night. From fried liver to fried egg sandwiches, this egg sandwich was a healthier choice when I would stroll into the Boofiya at 9 am on my way to work.
