Baked Zucchini Casserole

A similar version of this comes from an area of Greece called Nafplion which is located on the eastern side of the Peloponnese Peninsula. It’s a beautiful coastal city and has great seafood but also some other tasty dishes such as this baked zucchini casserole.

Equipment

  • Large Mixing Bowl

  • Colander

  • 9 in x 13 in baking dish

Ingredients

  • 4 Zucchinis (about 2 lbs. or 1 Kilo), thinly sliced

  • ½ pound (250 grams) Feta cheese, crumbled)

  • ½ lb. (250 grams) mozzarella, grated

  • 1¼ cup heavy cream

  • ¼ cup fresh mint, chopped

  • ½ cup parmesan cheese

  • 4 eggs

  • 2 Tsp. Freshly grated pepper

  • 2 Tsp. Aleppo pepper flakes (optional)

  • Salt to taste

  • Extra Virgin Olive Oil

Instructions

Thinly slice the zucchini into round slices. Sprinkle with salt and let them drain for 15 minutes, to remove the excess moisture. Make sure you dry off any excess moisture.

Meanwhile, in a large mixing bowl, beat the 4 eggs for 1 minute. Add the heavy cream, feta cheese, mozzarella cheese, chopped mint, and black pepper, and mix well. Set aside.

Grease a 9in x 13in baking pan using olive oil. Take the zucchini and arrange a layer on the bottom of the pan.

Now, take the cheese mixture and spread half of the mix over the zucchinis. Then repeat with another layer of zucchini and the remaining cheese mix.

Sprinkle the top with parmesan cheese and Aleppo pepper flakes. Cover with Aluminum foil and bake in preheated 350 F degree oven for 30 minutes.

Remove the foil, add the parmesan cheese and the Aleppo pepper flakes and bake for another 15 minutes, or until browned.

Take out of the oven and let it sit for another 15 minutes before serving.

Notes

The original version is made with only Feta cheese. I have adapted this recipe to be 50% Feta Cheese and 50% Mozzarella Cheese. You can also try the original version and just make it with Feta Cheese.
