Roasted Green Beans (Fasolakia)

This traditional vegetarian dish is served as main course. It includes potatoes and therefore, is quite filling as a stand-alone meal. There is a another version that includes meat as well. However, this version is only the green beans. Instead of stewing on the stove top, I have adapted this recipe to roasting in the oven. This is another go-to side dish for my Greek keto lifestyle.

Equipment

  • Colander, mixing bowl, baking tray

Ingredients

  • 1 pound (500 grams) French green beans.

  • 1 onion, sliced or grated

  • 2 tomatoes, grated or 1 cup tomato sauce

  • 2 minced garlic cloves

  • ½ cup Extra Virgin Olive Oil

  • Salt and freshly ground pepper to taste

  • Fresh chopped parsley for garnish (optional)

Instructions

Place your green beans in a colander and wash them well.

In a large mixing bowl, add the green beans, and all remaining ingredients and mix well.

Place in 12 x17 baking tray and spread evenly. Sprinkle with salt and pepper and place in preheated 375 F degree oven. Roast uncovered for 30-45 minutes depending on your oven.

Remove and transfer to serving platter and add more salt and pepper if needed. Garnish with chopped parsley.

Notes

I choose green beans that don’t require me to remove the string. Usually the French pre-bagged green beans are like that (Hericots Verts). You can also use the flat pole beans, which are also widely used throughout Greece for this dish. I also use a round clay pot, called a Youvetsi, and then serve it directly from the clay pot. But a normal cookie/baking pan will do.
