Roasted Asparagus with Lemon Zest

Steamed Asparagus with Hollandaise sauce is one of my favorite side dishes, especially when I’m in a fancy steak house.  However, these roasted asparagus are just as refreshing because of the slight heat from the Aleppo pepper flakes, and the tangy lemon zest.  Simply delicious.

During the spring, whilst living in Greece, I would venture out with my dad and uncles looking for wild Asparagus.  They are quite thin, compared to the asparagus we find in our local grocery stores.  They seem to grow in thorny bushes on Lesvos Island, sometimes making it difficult to cut.  However, the taste of wild Greek asparagus is well worth the foraging effort.  My dad would make them with eggs and some fresh dill…simply delicious.

Arrange your asparagus in a single layer before you add the olive oil, lemon zest, cheese, and Aleppo pepper flakes

On their way to the oven, these asparagus are covered with grated parmesan, salt, pepper, lemon zest, and Aleppo Pepper Flakes.

These roasted asparagus go great with any grilled meat, including beef, lamb, and chicken.

Equipment

  • Baking Tray

Ingredients

  • 1 lb. (450 grams) fresh asparagus spears

  • 2 Tbsp parmesan cheese, grated

  • 1 Tbsp black pepper, freshly grated

  • ½ Tsp salt

  • 1 Tsp Aleppo Pepper Flakes (Optional)

  • Zest of 1 lemon

Instructions

Preheat oven to 400 F degrees F.

Cut off about an inch of the stem, the tough ends, of the asparagus, but only if they are thick.

Place the asparagus on a baking sheet (with or without parchment paper), drizzle with olive oil, salt, and freshly grated black pepper, then toss to coat the asparagus completely.

Spread your asparagus in a single layer and sprinkle with your Aleppo Pepper flakes (if you are using), the zest of 1 lemon, and the grated Parmesan cheese.

Roast the asparagus for 25 minutes, until tender but still crisp.

Notes

If there are leftovers, cut them into 1-inch pieces and toss with crumbled Feta and balsamic vinegar for a delicious cold and refreshing salad.
