When you think of Greek tzatziki, you think of yogurt, cucumbers, and lots of garlic. This version hails from Constantinople and does not include garlic. Instead, it uses yogurt and feta to create rich and creamy tzatziki. It is super easy to make and goes well with meats or as a simple appetizer with Keto crackers.
Grate your carrot and cucumber and mix with salt and vinegar.
Strain.
Add Olive Oil, Salt, chopped fresh mint, and white wine vinegar.
Combine your feta, Greek yogurt, and chopped mint, along with your carrot and cucumber.
Combine and chill for two hours.
