Greek Keto Kourabiedes

During Christmas, I crave the famous Greek cookies called Melomakarona. On Lesvos Island, we refer to them as Finikia; just a different dialect, but the exact same Greek cookie that is baked, dipped in a honey syrup then sprinkled with walnuts. This is clearly forbidden on Keto so I had to come up with something similar, minus the Syrup. I then remembered the famous Belgian Speculoos cookies; or you might know them as Biscoff or Lotus cookies in other parts of the world. So, in the spirit of the Christmas holiday season, I hope you enjoy these Keto friendly cookies.

Equipment

  • Mixing Bowl

  • 12x16 Parchment Sheet/Paper (approx. 30.5cm x 40.6cm)

  • 13x18 Baking Tray (approx. 33cm x 45cm)

Ingredients

  • 1/2 cup (1 stick) melted butter

  • 1 large egg

  • 1/4 Tsp. liquid monk fruit

  • 1/2 Tsp. pure vanilla extract

  • 2 Tsp. Cinnamon

  • 1 Tsp. ground nutmeg

  • 1 Tsp. ground cloves

  • 1 Tsp. ground ginger

  • ½ Tsp. ground Cardamom

  • 1 cup walnuts

  • 1/2 cup coconut flour

  • 1/2 cup granulated monk fruit

Instructions

Preheat oven to 300° and line a baking sheet with parchment paper.

Combine the melted butter, egg, monk fruit, cognac and vanilla extract in a large bowl and set aside.

Add walnuts to a food processor and pulse until ground. Then add the coconut flour, sugar, and all the remaining spices and continue pulsing until combined.

In two parts, add dry mixture to the wet and whisk to combine. If the dough is too sticky, then add 1 to 2 tablespoons of additional coconut flour and combine.

Place the dough in between 2 silicone pads and roll flat, but not too thin. Using a round cookie cutter, cut out about 20-25 cookies. Or, you can make 14-15 equal sized balls. Arrange them on your baking sheet. Don’t worry as they will not spread in the oven.

Bake for 30 minutes.

Place them on a wire rack and allow them to cool for about 30 minutes before eating.

Notes

Depending on how thin or thick you roll the dough, you may want to set your timer for 20 minutes and start checking your cookies or your rolled balls. You want them to be a golden brown color...not burnt. So play close attention at the last 10 minutes of your baking.
