Yogurt Garlic Dip (Tzatziki)

Whoever has eaten a Gyro (yee-ro) has certainly eaten Tzatziki sauce. It is the white yoghurt and garlic sauce that not only goes with gyro, but so many other meat dishes. It can also be served as dip for vegetables. You can eat with fried meat balls (Keftedes), roasted chicken, roasted lamb, and so many other dishes.

Equipment

  • Mixing bowl, box grater

Ingredients

  • 17 ounces (500 grams) Greek strained yoghurt (Fage Brand)

  • 1 medium cucumber (or 2 small Persian cucumbers)

  • 2 minced garlic cloves

  • 3 Tbsp White Wine Vinegar

  • 3 Tbsp Extra Virgin Olive Oil

  • ½ Tsp Salt

Instructions

Wash and Peel the cucumber. Using a box grater, grate the cucumber and let it sit for 10 minutes. Then using your hands squeeze out all the water.

In a large mixing bowl, add the drained cucumber, yoghurt, olive oil, vinegar, garlic, salt and pepper. Mix well. Taste to adjust seasonings, but don’t make too salty.

Optional Step. You can mix in 2 tablespoons of chopped fresh dill.

Let it chill in the refrigerator for 2 hours before serving.

Notes

My mother would never put dill in her recipe so I make mine without dill. Dill adds a unique flavor, and many households use dill in Greece in their Tzatziki. If you love tzatziki, then make both versions and alternate between the two recipes. I also use the brand Fage. I’m very picky with my yogurt and I feel that is the only brand that says “Greek yogurt.” If you read the label and there are thickeners in your brand, then it is not true Greek yogurt. Greek yogurt only has 2 ingredients: milk and active cultures! That’s it! So choose your favorite Greek brand that only has these 2 ingredients.
