This salad goes great with my Creamy garlic Feta Salad Dressing.  This Greek Cobb salad is a pleaser.  Bacon, Egg, Lettuce, Feta, Avocado, Capers, Cucumber, and Kalamata Olives give you all the macros for this Greek Keto version of the famous Greek Cobb.  You can add the tomatoes, however, not too many since they contain some carbs.

Here are my Belfacck Ingredients! Bacon, Egg, Lettuce, Feta, Avocado, Capers, Cucumber, and Kalamata Olives.

You can use any kind of lettuce.  For some reason, I find that Iceberg works best for this combination of ingredients.

Greek Cobb Salad

This is an easy salad for 2 people and pairs well with my Creamy garlic Feta Salad Dressing. You can certainly add other herbs like dill and fresh mint, but try this version first.

Equipment

  • Mixing bowl

  • Tongs

Ingredients

  • B-Bacon strips (pork, chicken, beef, or Turkey), 2 pieces

  • E-Egg, boiled and chopped, 1 egg

  • L-Lettuce, ½ Head of Iceberg

  • F-Feta (20 grams), crumbled, divided

  • A-Avocado, small, sliced (about 60 grams)

  • C-Cucumber, English or Persian, sliced

  • K-Kalamata Olives, about 8

  • ¼ cup Tangy Feta Salad Dressing

  • Freshly grated black pepper to taste

Instructions

Wash your lettuce. Cut your leaves to 1-inch pieces.

In a bowl, add your cut-up lettuce leaves, cucumber, and Creamy Garlic Feta Salad dressing. Toss well.

Divide the salad into 2 plates. Add your Bacon, chopped Egg, crumbled Feta cheese, sliced Avocado, Cucumber, Capers, and Kalamata Olives. Sprinkle with freshly grated black pepper.

Notes

Make sure your lettuce leaves are dry so that the dressing stays thick. If your leaves still contain water, then the salad dressing will get watered down. These amounts are for 2 people and measured in case you are counting your macros. However, if you are not, then you can easily double and triple the recipe.
