Thinly sliced cabbage paired with green onions, fresh coriander (cilantro), fresh dill, fresh parsley, and fresh mint. Yes, please use all fresh herbs to really make this a refreshing lemon herbed slaw. This recipe only uses lemon and extra virgin olive oil as the dressing.

Sometimes I use my food processor to slice a whole head of cabbage and then I place it in a resealable bag. This can last me 2 to 3 days.

  • Mixing bowl

  • Tongs

Ingredients

  • 5 cups cabbage -- shredded

  • ½ cup fresh mint, chopped

  • ½ cup fresh dill, chopped

  • ½ cup fresh coriander (cilantro), chopped

  • ½ cup fresh parsley, chopped

  • ½ cup fresh spring onions, chopped

  • ½ cup extra virgin olive oil

  • ¼ cup extra fresh lemon juicel

  • ½ teaspoon salt

Instructions

Add the shredded cabbage to a big mixing bowl. Add the salt and toss. Leave this setting for 10 minutes.

Add the remaining herbs, and green onions.

Drizzle the olive oil and lemon juice over the salad and toss. Serve immediately.

Notes

This goes particularly with fried fish or roasted chicken breast.
