This salad goes great with my Creamy garlic Feta Salad Dressing.  It uses crips iceberg lettuce and fresh spinach leaves.  Don’t knock the Iceberg.  I know Romaine may have more nutrients, but the fresh crisp feeling of eating Iceberg is a good choice for this salad.

This salad combines crisp iceberg and spinach leaves with Kalamata olives, tomatoes, and cucumbers for a refreshing salad. This is an easy salad for 2 people and pairs well with my Creamy garlic Feta Salad Dressing.

Equipment

  • Mixing bowl

  • Tongs

Ingredients

  • ½ Head of Iceberg

  • 1 Cup of fresh spinach leaves

  • 2 Tbsp. Crumbed Feta

  • 1 small cucumber sliced

  • 8 sliced Kalamata olives

  • 4-6 cherry tomatoes

  • ¼ cup Tangy Feta Salad Dressing

  • Freshly grated black pepper to taste

Instructions

Wash your lettuce. Cut your leaves to 1-inch pieces.

In a bowl, add your cut-up lettuce leaves, cucumber, and Creamy Feta Salad dressing. Toss well.

Divide the salad into 2 plates. Add your crumbled Feta cheese, cherry tomatoes and Kalamata Olives. Sprinkle with freshly grated black pepper.

Notes

Make sure your lettuce leaves are dry so that the dressing stays thick. If your leaves still contain water, then the salad dressing will get watered down. These amounts are for 2 people and measured in case you are counting your macros. However, if you are not, then you can easily double and triple the recipe.
